Super Salad

You can see by the list of ingredients why I call this the Super Salad. It’s loaded with great nutrition and is very tasty. Mix all ingredients in a large bowl and enjoy. No dressing necessary as the avo and other wet ingredients make their own natural dressing. Easy to make. Easy clean-up. Boy I like the raw food way.

2 heads red butter lettuce

2 carrots grated

3 cucumbers sliced

1 zucchini grated

2 tomatoes

4 sheets nori cut into strips

Large double handful of sunflower sprouts

1 avocado

1 cup cultured vegetables

1" fresh ginger diced

Of course you can always add the juice of an orange or one of your favorite raw dressings if you prefer.

Recipe: Salad with Raspberry Vinaigrette

raspvinTry making this restaurant favorite at home!

Type of dish: Side Dish, Dressing, Salad
Equipment: Blender
Servings: Makes 6 to 8 servings

3 oz raspberries (about 15 berries)¼ cup olive oil1 ½ TB balsamic vinegar¼ tsp dijon mustard or mustard powder2 tsp fresh thyme leaves8 cups mixed salad greens, such as arugula, spinach or lamb’s quarters, etc.½ cup or more toasted and crumbled pecans or walnuts (or substitute crispy, cooked bacon)any other vegetables or salad toppings you’d like to add–we like shredded carrots and quartered hard boiled eggsTo make the dressing, blend the raspberries, balsamic vinegar, and mustard in a blender (we like the Magic Bullet for this).Spoon the mixture from the blender into a small mixing bowl. Whisk in the olive oil, and finally mix in the thyme leaves.In a large salad bowl, toss your greens and nuts (or bacon pieces) with any other salad ingredients you want to include.Dress the salad with the dressing and serve.

Spring Salad with Mango

This salad is so yummy and juicy…and bursting with flavor. If you make this once it will become one of your top favorites I’m sure. It’s easy to make and like most of my dishes very easy to clean up too. I use spoon to pull small pieces of fruit out of the avo and mango halves. Cut the rest of the mango flesh off the seed with a little paring knife.

Mix thoroughly so the mango, tomatoes and avocado coat and make a nice dressing.

1 head of romaine (sliced thinly like cabbage for slaw)

4 to 5 tomatoes diced

2 cups sunflower sprouts

4 to 5 Persian cucumbers cut into short chunks

1 mango

1 avocado

1” chunk of ginger diced

3 sheets of nori cut into thin short strips

Substitute as you need to for ingredients you have on hand.
