Spring Salad with Mango

This salad is so yummy and juicy…and bursting with flavor. If you make this once it will become one of your top favorites I’m sure. It’s easy to make and like most of my dishes very easy to clean up too. I use spoon to pull small pieces of fruit out of the avo and mango halves. Cut the rest of the mango flesh off the seed with a little paring knife.

Mix thoroughly so the mango, tomatoes and avocado coat and make a nice dressing.

1 head of romaine (sliced thinly like cabbage for slaw)

4 to 5 tomatoes diced

2 cups sunflower sprouts

4 to 5 Persian cucumbers cut into short chunks

1 mango

1 avocado

1” chunk of ginger diced

3 sheets of nori cut into thin short strips

Substitute as you need to for ingredients you have on hand.
